Adventure travel ideas - your experiences?

My boyfriend and I have recently discussed going abroad for perhaps the summer but open to times of year, to go on an adventure and see some of the world.The problem is with so many sites out there for travel i dont know where to start.

We would love to combine some adventure with aborbing some local culture. Id also if possible like to include some kind of nature in it (dolphins/elephants/monkeys...)

Have you visited somewhere that you recommend to everyone you meet?

Id love to hear your experiences and any parts of the world you would suggest....i dont want to do Everest!
I should add that he is 34 and lives in America and i am 25 and live in the UK so we arent looking for US travel!!
